The ingredients of Mingtang are flour, malt extract, cooking oil and white sugar. First, mix the flour with water and knead it into a dough called "washing" (洗漿). That is, rinse it with water, take out the gluten, boil the remaining water, and then add the above-mentioned materials and cook until it becomes thick. Pour it into an iron plate and sprinkle with sesame seeds. The latter does not use flour but cornstarch, and adds peanuts. The method of making it is similar. Due to the different ingredients, the texture of Chaozhou Mingtang is QQ (soft and tough), while the texture of Fujian Mingtang is very tough, like chewing rubber.
Legend has it that Ming sugar was invented by Zheng Chenggong's (鄭成功) troops. They were resisting the Qing army in Fujian and always carried Ming sugar with them to eat when they were hungry. Because of the resistance against the Qing Dynasty, this food was called "Ming Candy" to show the determination to resist the Qing Dynasty and not forget to restore the Ming Dynasty!
Gongtang is made of white sugar, malt extract and peanuts. First, cook the sugar and malt extract until they become thick, then add the roasted and peeled peanuts. Take them out and beat them with a mallet before they cool down. Keep beating until the peanuts and sugar are finely crushed. Then make the stickier parts into a crust and wrap the loose parts.
