Kale is also delicious with Guangdong cured meat. First, steam the cured meat and sausage, let cool, slice them, sauté them until fragrant, and then stir-fry them with kale using the above method. It goes well with rice. The kale in the lotus pond is very crisp and sweet, just as Su Shi said, "crisp and delicious in the mouth." If you are interested in the origin and stories of Kale in Lotus Pond, you may search online for "Growing Kale in Lotus Pond, Sheung Shui, Hong Kong". It is worth reading.
🥘 Recipe:
Wash the Chinese Kale first, remove the old and tough leaves, and then peel off the thick skin of the stems. Be careful not to be soft-hearted, the thick skin must be thoroughly peeled off, otherwise there will be old fibers sticking to the teeth when eating. Heat a pan, add oil, sauté ginger rice, then add coarse cabbage stems, stir-fry for a while, then add tender cabbage stems, add a tablespoon of sugar and stir well, then add half a tablespoon of ginger juice, a tablespoon of burning wine, and a little salt until heated through. Ginger rice refers to ginger cut into fine pieces. The wine can be rice wine or shaoxing wine.
🔅Notes:
accredited farm ≠ organic farm; This is NOT ORGANIC. 🔆🔆 note that farmers are encouraged to use pesticides correctly and safely as well as farming with excellent, environmentally friendly methods.
The "Accredited Farm Program" ensures the high quality and safety of vegetables:
✅ Randomly test soil, irrigation water, and vegetable samples
✅ Regular farm visits
✅ Promote excellent horticulture practices
Accredited vegetables are vegetables produced under the Accredited Farm program. In 1994 the Department of Fisheries, Agriculture and Nature Conservation (AFCD) and the Department of Vegetable Organisation (VMO) jointly implemented the Accredited Farm Program to encourage farmers to use pesticides correctly and safely and to farm with excellent, environmentally friendly methods.
One method of testing is that the farmer will not use pesticides for a period of time before the expected harvest of vegetables, which is the vegetable safe harvest period, following safety standards and reducing pesticide residues. Of course, we must rinse the vegetables thoroughly with clean water before eating, so you can eat more safely and assuredly!
