Chenshen Winter Melon Soup
Ingredients: 2-3 Chen kidneys, 1.5kg winter melon (with skin), 2-3 scallops, 400g lean meat, 2 candied dates, 8-10 bowls of water
1. Soak the Chen kidney for 30 minutes. Wash the Chen kidney and lean meat in water and set aside.
2. Soak the scallops slightly, wash the candied dates, peel the winter melon and remove the seeds, wash and cut into large pieces.
3. Pour water into the pot and bring to a boil, add all the ingredients.
4. After simmering for 20 minutes on high heat, switch to slow cooker for 1-1.5 hours.
