When you cut a persimmon open, you may see small black spots that look like black sesame seeds on the flesh. The black spots on the persimmon flesh are actually tannins. 木の上で長い間熟させる完熟柿で、樹になったままの状態で渋抜きができるので、より甘みが強く、固めのシャリシャリとした食感が楽しめます。果皮は紅色が濃く、果肉はまるで黒砂糖をふったような色合いです。
紀ノ川柿(きのかわがき) - 品種名ではなく、平核無柿を樹上で実をつけたままアルコール入りビニールを被せて渋抜きした柿。果肉は渋みのタンニンが固形化した黒い斑があり、甘みが強い。
