Hokkaido Nagaimo refers to the premium variety of nagaimo (Japanese mountain yam / Chinese yam / long yam), primarily cultivated in the cold, fertile volcanic soil of Hokkaido, Japan's northernmost island. Thanks to the region's large temperature difference between day and night, and its clean, cold environment, Hokkaido nagaimo is renowned for its exceptionally fine, dense, pure white flesh, moderate stickiness, crisp yet refreshing texture, and clean, slightly sweet flavor with almost no bitterness — widely considered one of the highest quality nagaimo in Japan.
It has a long, cylindrical shape with light brown, slightly hairy skin. Once peeled, the interior is snowy white and releases a characteristic slippery, viscous mucilage. Harvested twice a year (autumn: Nov-Dec / spring: Mar-May), the spring-harvested ones are especially prized for their enhanced sweetness after maturing through the cold winter.
