In Japan, it is a white fish with a strong umami flavor and is delicious, so it is caught and traded as a fish of high economic value. In particular, large ones caught in coastal waters are traded at high prices, and are especially prized in the Kansai region. However, many of the ones sold commercially in Japan are imported, and in that case, care must be taken as they lose their freshness. The peak season in Japan is from autumn to winter.


Because the flesh is soft and falls apart easily, it is not suitable for simmered dishes, and is often steamed or grilled with salt. Because the flesh is soft, it is sometimes served as a meal for sick people. If it is fresh, it can also be eaten as sashimi.


In Hong Kong and Guangdong Province, it is called "Red Shirt" (Cantonese: hong sam, 紅衫魚) and is eaten as a mid-level fish. It is most often fried in oil, but the seasoning varies depending on the region; for example, in Hong Kong it is fried in peanut oil and flavored with fermented black bean paste. 身が柔らかく崩れ易いため、煮付け料理には向かず、蒸し魚や塩焼きにする場合が多い。身が柔らかいため、病人用の食事として供される場合もある。なお、鮮度が高ければ、刺身にして食べる例も見られる。
