Morels feature in many cuisines, including Provencal cuisine. Their flavor is prized by chefs around the world, with recipes and cooking methods designed to bring out and preserve its delicious taste. As with most edible mushrooms, they taste best when picked or purchased fresh. They are sometimes added to meat and poultry dishes and soups, and can also be used as a pasta stuffing. Morels are known to contain heat-labile toxins, so they must be cooked before consumption.
There are several ways to preserve morels: they can be "quick-frozen" by simply rinsing them under cold water or soaking them in a bucket for a few minutes, then spreading them on a baking sheet and placing them in the refrigerator. Once frozen, they can be kept for a long time in an airtight container with the frozen glaze. However, they can sometimes become a bit mushy after thawing, so they are best frozen after steaming or frying. Because morels are naturally porous, they may contain trace amounts of soil that is difficult to wash out. Cut the body in half lengthwise if necessary and remove any visible soil with a brush. Mushroom pickers sometimes recommend soaking morels briefly in a bowl of salted water before cooking, but many cooks disagree.
Drying is a popular and effective method for long-term storage, and morels are widely available in this form. Any insect larvae that may be present in the fruiting bodies will usually fall off during the drying process. Dried morels can be made into a stock by soaking them in warm water or milk for 10 to 20 minutes, and the soaking liquid can be used as a stock for soups.
