Product Description:Shrimp is the main ingredient in Cantonese cuisine, including shrimp omelette, shrimp fried rice, Yangzhou fried rice, shrimp wontons, shrimp siomai, shrimp dumplings and shrimp dumplings, etc. In the Yangtze River Delta region, fresh river shrimps are commonly used to make various stir-fry dishes, such as fried shrimps and Longjing shrimps. Cooking Tips:There are only three main ingredients for shrimp wontons, namely fresh pork, frozen shrimps and ready-made wonton skins. Don’t be afraid of fat when choosing fresh pork. Choose one with a fat to thin ratio of one to one. You can use frozen shrimps.

Soak the semi-fat and lean pork in water for 30 minutes to release the odor, and soak the frozen shrimp in salt water for 30 minutes. Chef Xing reminds you that the wonton shrimp must be refreshing enough. If you buy fresh shrimp, you must harden the shells and add salt to make it refreshing. It is more convenient to use the frozen product directly. After soaking, wash and absorb the water. After the shrimps are dried, put them back in the refrigerator.

Notes:Shrimp is one of the common ingredients in Chinese food. It is made from fresh shelled shrimp. The ones that are elastic and juicy are best. Because the intestines of shrimps can contain dirt, hygienic eaters will ask that the intestines of shrimps be cut away.

Peel and devein the shrimps, put them in a pot and rinse them with water for a few minutes.
Soak the shrimp meat in ice water for five minutes and then dry.
Add the seasonings and sesame powder to the shrimp meat and mix well with your hands.

Bend your left hand slightly into a bowl shape, pick an appropriate amount of filling (about the amount of one shrimp) and put it in the palm of your hand. With the pressure of the wonton pick, first retract your index finger, middle finger and ring finger, then your last finger, and finally fold it with your thumb.
After wrapping, let it sit for a while before cooking to make the filling more delicious.

Boiled wontons

Place the wontons in boiling water and cook for about 1 minute and 30 seconds. Once the wontons float to the surface, you can scoop them up and eat them.

In the store, it is boiled for 6 to 8 hours with shrimps, pork bones, earth fish, Jinhua ham, etc. For the home version, you can use Japanese soy sauce and mirin to make a simpler soup to accompany it.
