雞髀多肉,肉質嫩滑,用手拿著撕咬,可以享受滿口都是肉的瘋狂。油雞髀炸雞髀油雞髀……到快餐店,總是掙扎,想皮滑肉嫩,又想惹味脆卜卜,但又擔心熱氣千年油!不如自家製蜜汁燒雞髀,微脆香甜肉質嫩滑,兩者兼得,油分也可自己控制。

吃蜜汁燒雞髀,最享受的是它那大大塊皮、大大啖肉,正因肉太厚,若半煎炸的時間不足,內裡仍未熟透;但時間過長,卻容易焦燶。我們可先把雞髀揼鬆,就像豬扒那樣,讓肉質鬆弛,然後再以小刀𠝹它幾刀,可視乎大小而定,𠝹時要用力一點,𠝹深一點,小心不要切斷便可。這樣不僅更入味,生燒或生炸便可縮減時間,保留更多肉汁。

🔆 不失敗秘訣

  • 雞髀以紹興酒塗抹,以辟雪味, 毋須再汆水。
  • 如豉油汁未能蓋過全隻雞髀,煲 煮期間可把它反轉。
  • 餘下的豉油汁,可放雪櫃冷藏約 3-4星期,拌麵或整雞翼也可。



蜜汁燒雞髀

食譜 蜜汁燒雞髀(煎)
材料

雞髀2隻、生抽1湯匙、老抽1/2湯匙、紹酒1/2湯匙、蒜蓉1湯匙、蜜糖2湯匙

做法 1. 雞髀洗淨抹乾,用小鎚揼鬆。
2. 再以小刀在厚肉位置𠝹幾刀。
3. 加入生抽、老抽、紹酒、蒜蓉、1湯匙蜜糖醃1小時。
4. 燒熱鑊,下多一點油。
5. 放入已抹去醃料的雞髀,皮向下,以中小火半煎炸至金黃。
6. 反轉另一面煎至熟,髹上蜜糖,再反轉以中大火略煎即成。

 

蜜汁燒雞髀,不想放太多油,也可以用焗爐處理,把醃好的雞髀,放入已預熱攝氏180度焗爐,焗20-30分鐘,髹上蜜糖後再焗8-10分鐘便可。

🔆 不失敗秘訣

  • 雞髀先揼鬆、別幾刀,是為了讓它 入味和更易熟透。
  • 蜜糖較易焦煨,故火不能太大。
  • 也可以焗爐代替,預熱焗爐攝氏 180度,焗20分鐘,髹上蜜糖後 再焗10分鐘即成。

 

🔅  注意事項:

生雞肉比冰箱裡的新鮮雞肉保持品質的時間更長,因為烹飪過程中水分會流失。雞肉在冷凍保存過程中營養價值變化不大。然而,為了獲得最佳質量,建議生整雞在冰箱中的最長儲存時間為12 個月,生雞肉部分為9 個月,生雞內臟為3 至4 個月,熟雞肉為4個月。冷凍通常不會導致家禽顏色發生變化,但骨頭和附近的肉會變黑。當家禽肉冷凍和解凍時,色素會透過幼禽的多孔骨骼滲入周圍組織,導致骨骼變黑。 

直接在原始包裝中冷凍雞肉是安全的,但這種類型的包裝會透氣,隨著時間的推移,品質可能會下降。因此,為了長期儲存,建議將這些包裝包裹起來。建議將未開封的真空包裝原樣冷凍。如果食品在冰箱中時包裝被意外撕破或打開,食品仍然可以安全使用,但仍建議重新包裝或重新包裝。雞肉應該遠離其他食物,這樣如果它們開始解凍,它們的汁液就不會滴到其他食物上。如果之前在零售店購買了冷凍雞肉,如果處理得當,可以重新冷凍。
