Chuen Lung villager Mr Law is one of the farming households who still insist on growing watercress. He and his brother took over their parent’s work after retirement. They follow the traditional method taught by their parents to plant watercress on dry land, water them frequently every day, and use organic fertiliser. Mr Law believes that the cool hillside climate and adequate supply of water make Tai Mo Shan perfect for growing watercress.
Farmers have worked hard for half their lives and are in company with nature. They listen to the whispers of plants with their hearts and feel the cycle of life. Every farmer has his own planting philosophy.
In the 1950s, Law Kwok Sang of Yuelai Farm moved to Chuanlong with his parents to grow vegetables. Although the geographical location is unique, it still needs the farmers to work silently. My parents cultivated watercress with great care, and the vegetable seeds were nurtured in the fields from generation to generation for more than 60 years without interruption. Returning to the farm after retirement, he used his body and mind to experience the mysteries of nature, comprehend the symbiosis of watercress and pig hair grass, and the natural law of cultivation and harvest. Law Kwok Sang not only protects the efforts of his parents, but also insists on growing high-quality vegetables.

Watercress is sweet and slightly cold in nature. It has the effects of clearing away heat and detoxifying, clearing dryness and moistening the lung, resolving phlegm and relieving cough, diuresis and analgesia. It also contains high amounts of carotenoids and lutein, which have the effect of strengthening eyesight.
Its vitamin C component helps protect cells in the body from damage by free radicals, and has the effect of delaying aging. The edible parts of watercress are tender leaves and stems. Washing watercress often finds leeches attached to it and must be washed carefully. The roots should be removed first and then soaked in salt water for about 45 minutes.
