Chicken fat, known as "chicken oil" in Chinese cuisine, is rendered from chicken skin and fat (often from the area around the tail and abdomen). The slow-rendering process yields a golden, fragrant oil with an intense chicken aroma, along with crispy chicken cracklings (known as "chicken crumbs" or "schmaltz cracklings"). It is a traditional flavor enhancer in Cantonese, Shanghainese, and Taiwanese cooking, commonly used to season blanched vegetables, make chicken-fat rice, stir-fries, or enrich soup stocks. Its rich yet clean chicken flavor adds depth and umami to many classic Chinese dishes without being overly heavy. (In Jewish cuisine, the equivalent is called "schmaltz.")
