Wing Hing Wai is located on Nam Hing West Road, Pat Heung, Yuen Long. In the old days it was called "Stone Circle". At the entrance of the village, there is a representative building with a gate engraved with “永慶圍” (Wing Hing Wai) as a sign. In the past, when the British took over the New Territories of Hong Kong, the original residents of the New Territories rebelled against the British. One of the battles was at Shek Wai, against the British army across the river, one of the famous "Six Days of the New Territories". Wing Hing Wai belongs to Kam Tin Upper Village, an indigenous village in Pat Heung, Yuen Long District, Hong Kong.
Wing Hing Wai village farmer Mr. Feng cooperated to revitalise this piece of farmland, use organic farming methods to fertilise it, restore farming, and gradually transform it into an organic farm.
Wing Hing Wai Organic Farm, in line with the mission of transforming the original conventionally cultivated farmland into organically grown farmland, aims to cultivate and revitalise the old conventionally cultivated land, and grow fresh and healthy food with conscience.
In April 2015, Wing Hing Wai Organic Farm applied to the Agriculture and Fisheries Department to join the Organic Farming Support Group. The soil and water quality inspections met the requirements for organic certification and are now applying for organic certification.

Nutritional value: Lemon is rich in vitamin C and citric acid, which has a good whitening effect. Barley lemonade can detoxify, whiten and remove edema. Add lemon and honey when drinking for a more detoxifying effect. Barley has the functions of clearing heat and removing dampness, invigorating the spleen and stomach, facilitating urination, eliminating edema, calming the mind and tranquilizing sleep.
Barley Lemonade Ingredients:
- Raw and cooked barley 1 taels each (75g total)
- Water 1200ml
- 2 lemons
- A little honey (no need to add)
Cooking method:
Soak the barley in water for 1 hour. After the water boils, pour the soaked barley into the water, simmer for 5 minutes on high heat, then turn to low heat and simmer for 45 minutes. Then add honey and lemon juice and drink.
Special attention: Lemony is cold, and patients with chronic enteritis should not drink lemonade. Lemonade is also not suitable for drinking with milk.
Common problem:
Why should raw and cooked barley be used together? Servings: 3 to 4 people
Material:
- 50g raw barley
- 20g cooked barley
- 4 candied dates
- Water (6 measuring cups) 1½ liters
- 4 to 6 lemon slices
Method:
Rinse raw and cooked barley with water and drain.
Pour water into a deep pot, add raw barley, cooked barley and candied dates, bring to a boil over high heat, turn to medium-low heat, and cook for about 30 to 45 minutes.
After cooling slightly, add lemon slices and serve. Or store it in the refrigerator and add lemon slices when you need to drink it.
hint:
Cool the boiled barley water and add lemon slices, which will retain more vitamin C.
The raw barley is slightly cool, add an appropriate amount of cooked barley to balance. Both are available in herbal or grocery stores.
Candied dates are naturally sweet and delicious. You can also substitute a moderate amount of raw sugar. Or drink it with honey after cooking.
#Remarks
