Super Simple Buckwheat Porridge Recipe (Serves 1-2, Bilingual Steps in English and Chinese)
Ingredients:
1 cup (approx. 200g) Buckwheat Groats
4-5 cups water or milk/plant-based milk (adjust to your desired consistency)
A pinch of salt (optional)
Sweet version: Honey/maple syrup, cinnamon powder, apple/banana slices, nuts, berries
Savory version: Scrambled eggs, vegetables, cheese, herbs
Steps (cook for about 20-30 minutes):
Rinse the buckwheat groats thoroughly (to remove bitterness) and drain.
Add water/milk and buckwheat groats to a pot, bring to a boil over high heat, then reduce to a simmer.
Add a pinch of salt, cover and simmer for 15-25 minutes, stirring occasionally to prevent sticking, until the buckwheat kernels are soft and chewy and have absorbed the water to a porridge consistency (add more water if you prefer a thinner consistency).
After turning off the heat, let it sit for 5 minutes, then ladle into a bowl and add your favorite toppings.
Tips:
Using roasted buckwheat kernels (kasha) will give it a more nutty flavor.
Want it faster? Soak them overnight, and they only need 10 minutes to cook the next day.
Overnight version: Soak raw buckwheat kernels in plant-based milk overnight, add fruit and eat as a cold porridge.
