Australian and Japanese Wagyu grades

What is Australian Wagyu M9? 

The most straightforward grading of Australian Wagyu is based on the degree of marbling, or marbling. Officially, Australian Wagyu grades range from M1 to M9. The higher the grade, the denser the marbling. M9-grade beef has the richest, most evenly distributed marbling, resulting in the best taste. 



Compared to regular beef, Australian Wagyu has 3 distinct characteristics. First, it has a sweet, fragrant butter flavor, more beefy than beef. Second, it has a tender texture, thanks to its evenly distributed marbling, lacking any fascia, resulting in a melt-in-your-mouth texture. Third, it is juicy. After a simple sear, the evenly distributed marbling melts, creating a delicious gravy that leaves a lasting impression.
