Paradise fruit, also known as Gac fruit (scientific name: Momordica cochinchinensis), is a tropical fruit native to Southeast Asia and parts of Taiwan. It is renowned as the "fruit from paradise" due to its exceptional nutritional profile. The fruit is oblong, covered in soft spines, and turns bright orange-red when ripe. When opened, it reveals yellow-orange flesh and a vivid red aril (the most nutrient-dense part) surrounding flat black seeds.
Gac fruit boasts the highest lycopene content in the plant kingdom—up to 70 times more than tomatoes—and beta-carotene levels around 15 times higher than carrots, along with lutein, zeaxanthin, vitamins (E, C, B-group), dietary fiber, unsaturated fatty acids, and minerals. It is prized as a superfood for its powerful antioxidant properties, supporting eye health (helping prevent dry eyes, night blindness, and macular issues), anti-aging, immune boosting, and digestive wellness.
The black seeds contain mild toxins and must be removed before consumption. It is commonly used in soups, juices, or traditional dishes in regions like Vietnam and Taiwan.

Paradise Fruit (Gac Fruit) Recipes
The most nutritious part of the paradise fruit (scientific name *Momordica cochinchinensis*, also known as gac fruit, couple fruit, or longevity fruit) is the bright red aril covering the black seeds, rich in lycopene, beta-carotene, etc. Traditionally, it is often used in soups, steamed rice, or juiced. The black seeds are slightly toxic and must be completely removed before consumption. Below are some common and simple home-style recipes suitable for trying at home (quantities can be adjusted to personal preference).

1. Classic Vietnamese Red Sticky Rice (Xôi Gấc)
This is the most traditional way to eat paradise fruit, often consumed during the Vietnamese Lunar New Year (Tết). Its bright and auspicious color symbolizes good luck.
Ingredients (serves approximately 4):
Glutinous rice: 3 cups (approx. 600g)
Bird's eye aril (red part): approx. 1-1.5 cups (1-2 fresh fruits, or frozen bird's eye aril paste)
Coconut milk: 1 cup (can be added for aroma)
Rice wine or Shaoxing wine: 2-3 tablespoons
Oil: 2 tablespoons
Salt: 1-1.5 teaspoons
Sugar: to taste (optional, depending on sweetness)
Instructions:
Wash the glutinous rice and soak for 4 hours or overnight, then drain.
Remove the red aril from the bird's eye fruit, remove the black seeds, and mix with rice wine, oil, and salt to form a red paste.
Mix the paste into the glutinous rice, coating it evenly.
Steam in a steamer or rice cooker for 30-40 minutes, drizzling with coconut milk halfway through for an additional 10 minutes to make the rice softer and more fragrant.
After steaming, sprinkle with sugar to taste. Best served hot. Often served with salted egg yolk, sausage, or shredded coconut.
Tips: If you have frozen paradise fruit paste, it's more convenient to use it directly after thawing.
2. Paradise Fruit Chicken/Pork Rib Soup (Eye-Nourishing Soup)
A common Taiwanese home-style soup, with a sweet and clear broth, suitable for nourishing the body in autumn and winter.
Ingredients (serves approximately 4):
1-2 paradise fruits (approx. 600g)
500g chicken or pork ribs
Several slices of ginger
Red dates, goji berries (as needed)
150g pineapple or carrot (optional, for added sweetness)
1500-2000ml water
Salt, rice wine (as needed)
Instructions:
Hip up the paradise fruit, scoop out the yellow flesh and red aril, and remove the black seeds (the red part is the most nutritious).
Blanch the pork ribs or chicken to remove blood.
Bring water to a boil in a pot, add all ingredients (including the red/yellow parts of the paradise fruit), ginger slices, and rice wine.
Simmer over high heat, then reduce to low heat and simmer for 30-60 minutes, until the broth turns a light orange-red color.
Finally, add salt to taste and enjoy. The flesh has a soft, tender texture similar to green papaya.
Variations: Add clams and chicken tenderloin to make "Paradise Papaya Chicken Soup," or add carrot puree to thicken.
3. Paradise Papaya Juice / Smoothie (Simple Drink)
The best way to directly obtain nutrients, suitable for daily antioxidant supplementation.
Paradise Papaya Juice / Smoothie

Ingredients:
Paradise Papaya red aril (1 fruit is enough)
Lemon or lime 1-2 (to remove astringency and enhance flavor)
Honey or sugar (to taste)
Water or coconut water (to taste)
Ice cubes (for making smoothies)
Instructions:
Remove the red aril and black seeds.
Place in a juicer, add water/lemon juice and honey, and blend into juice (you can strain out the pulp).
Drink directly or add ice to make a smoothie. You can also mix with banana, apple, and milk to make a milkshake. Tip: Paradise fruit juice is very red, remember to wear gloves to avoid staining.
Other creative ways to enjoy it:
Stir-fry: Slice the yellow flesh of the paradise fruit and stir-fry with Matsusaka pork or vegetables. It has a crisp and tender texture and no bitterness.
Desserts: Mix into mochi, mousse, or make jam.
