Choy Sum (Brassica chinensis var. parachinensis), literally meaning "vegetable heart" or "flowering cabbage," is one of the most popular leafy green vegetables in Hong Kong and southern China. "Local organic choy sum" refers to choy sum grown by local Hong Kong farms using certified organic farming methods—no synthetic pesticides, chemical fertilizers, or GMOs. Instead, farmers rely on natural compost, crop rotation, and biological pest control.
Characteristics:
Common cooking methods: stir-fried with garlic, blanched and served with oyster sauce, or poached in superior broth (shang tang). Simple preparations best highlight its natural delicate flavour.
Special matters: Flowers and leaves are often the places where most pesticides accumulate, and the surfaces of flowers and leaves must be soaked and cleaned carefully.
