Padrón pepper (also known as Herbón pepper) is a traditional variety of chili pepper originating from the municipality of Padrón in Galicia, northwestern Spain. These small green peppers, typically 2-4 inches long with a wrinkled, elongated shape, are harvested young and immature. Most are mild with a fresh, grassy, and slightly bitter-sweet flavor, but about one in ten can be surprisingly spicy—giving rise to the famous Galician saying: "Padrón peppers, some are hot, some are not." The classic preparation is to blister them quickly in olive oil and sprinkle with coarse sea salt, serving them hot as a popular Spanish tapa (appetizer).
