Lam Cheong Kee was established in 2012. At the beginning of its opening, it set a record of selling 100,000 fish eggs in three days on Guilin Street in Sham Shui Po, which caused a hot talk in the city. The birth of Lam Cheong Kee stemmed from the owner Mr. Lam's pursuit of food taste and quality. One year, Mr. Lam returned to Hong Kong from out of town and felt, "Why is the food now not as delicious as before?" Pair it to increase its umami and hopefully bring back childhood memories of delicious food. The result does not disappoint, he succeeded! Lam Chang Kee's fish balls, spicy sauce, shrimp paste, and curry sauce are all prepared by Mr. Lam himself. 

Mr Lam, who runs Lam Cheong Kee, has a motto: Make food well first, and the food will naturally reward you! 

Therefore, in the process of making food, Lam Cheong Kee’s priority is not the cost of ingredients, but whether the ingredients used are high-quality. Based on this principle, fish eggs with a ratio of 80% of fish to meat will be available. Taking shrimp paste as an example, Lin Sheng looked for many places and countries, tried many different varieties, and finally decided to use cherry blossom shrimp from a certain origin to make shrimp paste. Even the soy sauce of shrimp egg fried noodle is Mr. Lam’s own unique taste. This is Mr. Lam’s insistence on making delicious food. 

As Mr. Lam's motto says: make the food well first, and the food will reward you! Although Lam Cheong Kee has only opened for a few years, it has been hailed by diners as "conscience fish balls" and "Hong Kong conscience". It seems that customers feel Lin Sheng's attitude of making food with heart.

About Flavour enhancer (E621)*

*Lam Cheong Kee adheres to the tradition of not adding MSG and preservatives. All fish noodles with fish balls are not seasoned with MSG. In order to enhance the umami taste, Mr. Lam uses expensive fish including oily Japanese amberjack to enhance the freshness, and the list is listed to enhance the flavor The Malaysian plant uses a very small amount of "flavor enhancer", just to "lift" the flavor. Lam Cheong Kee 98% pure fish balls are basically no MSG. The guest asked me, "What is the flavour enhancer in fish eggs?" I said, "Lam Cheong Kee's Mr Lam's characteristic is that "no MSG is added". However, fish eggs are still "must" to enhance the flavour in the Malaysian factory. The amount is only minimum and is used to lift the taste. Mr Lam uses other methods (use another expensive fish) to enhance the taste of fish balls", but he did not write it out. Customers can try it out with our taste buds, and he wrote it out because of his honesty!

There are many different ways to eat fish noodles besides the side stove?

Fish noodle recipe 1: Fried fish noodles with seafood corner
1. Seafood corner cut into strips (without snow removal);
2. Dice green beans (you can choose other vegetables you like);
3. Fry the seafood corner until fragrant, add the green beans and fish noodles, and fry the green beans with soy sauce until the green beans are cooked and ready to be served on a plate.
After serving, the cherry prawns that can be sprinkled with a little shrimp paste will be more fragrant.
If the food is spicy, you can directly use the oil of the shrimp paste to fry the seafood corners.

Fish Noodle recipe 2: Chicken Chop and Simmered Fish Noodle
1. Put the marinated chicken chop (cut into pieces), add the soup, and cook in a pan over low heat;
2. When chicken chop 5 is mature, you can put string beans and fish noodles;
3. Cook until the chicken chop is cooked and the juice is collected before serving
Fish noodles will absorb the chicken juice and soup flavor of the chicken chop. It is very delicious!
