As we continue recovering from the pandemic, the food industry is learning to adapt to new ways of working, with the farm-to-table concept coming to the forefront. The advent of sourcing locally instead of importing from halfway across the planet is not a surprising one, given the benefits of the former. For a start, sourcing locally is extremely beneficial to the ongoing fight against climate change and the pursuit of greater sustainability. In fact, each egg sourced locally boasts a carbon footprint 700 times smaller than one that’s imported from the US – yes, 700 – and that converts to roughly six hours of powering lighting at home. It’s a staggering statistic, and one we can no longer ignore as global temperatures and sea levels continue to rise, and catastrophic weather phenomena occur more frequently.
