 Discussion on food regulation: Since flower growers often treat New Year oranges as ornamental plants rather than edible fruits, they will use more pesticides on them, which is why there are more pesticide residues in New Year oranges[4]. Since New Year’s oranges are usually declared for import and export as ornamental plants, the government’s health quarantine department will treat them as flowers and will not subject them to stricter inspections as edible plants. Therefore, this should be considered before using Nian oranges to pickle salty kumquats.

Common pickling methods

Salted kumquats are readily available for purchase, but many families also choose to pickle them themselves[2][3].

1. Prepare clean glass bottles with lids, making sure the containers are free of contamination and grease.

2. Select kumquats with intact appearance, wash them first, and scald them with hot water to make sure they are free of grease, and drain them in a cool place.

3. Put a layer of salt on the bottom of the glass bottle, then put in the first layer of kumquats, then add salt on the kumquats, and try to make the salt surround the kumquats. When one layer is completed, continue to make another layer using the same method until all the kumquats are in.

4. When the last layer of kumquats is placed, you must put enough salt on it to cover it. Finally, tighten the lid of the glass bottle and place it in a cool place to marinate for more than half a year.

How to use

When using, people usually take out two or three salty kumquats from the bottle and mix them with hot water before drinking.
