Malabar Spinach are commonly known as imperial dishes, fungus dishes and so on. It is an annual or perennial vine, native to tropical Asia. Taiwan can produce almost all year round, with abundant production in summer and autumn. The content of beta carotene, vitamin C and folic acid is high, and the food value is extremely high.
Malabar Spinach is heat-resistant, drought-tolerant, fast-growing, and has very good resistance to pests and diseases. It does not require medication during cultivation, so it is very suitable for organic cultivation. It is also healthy for open-air cultivation, which is both organic and cost-effective.
The edible parts of the Malabar Spinach are young shoots and leaves, and a few farmers directly pick the leaves and sell them.
