Guangdong rice dumplings (Hakka)

Glutinous rice dumplings basically fall into two categories, namely rice dumplings with lye and rice dumplings with salted pork, which are traditional festive food of the Dragon Boat Festival.

The practices in Guangdong and Hong Kong are roughly similar to many coastal areas in southern China, but steamed rice dumplings, lye water rice dumplings (sweet food) and pork rice dumplings are the main ones. Red bean rice dumplings and mung bean rice dumplings are also popular.

Instructors with rich experience explain and teach traditional rice dumpling techniques. Each person makes four Hakka rice dumplings by himself, steams them at home, shares his experience and tastes Hakka rice dumplings. The teaching includes vegetarian bean rice dumplings, pork rice dumplings, etc.

History
Rice glutinous rice is a special food for the Dragon Boat Festival. It was called corn millet in ancient times. As early as "Shuowen Jiezi" (《說文解字》), the word "糭" has been found, which means "rice wrapped in reed leaves. From the sound of rice." People use of eating glutinous rice dumpling. It has a long history.

In the Southern and Northern Dynasties, there were Yizhi rice dumplings (Yizhi is a herbaceous plant of the Zingiberaceae family); in the Tang Dynasty, there were Jiuzi rice dumplings (nine rice dumplings of different shapes, sizes and colors strung together with silk threads) and Baisuo rice dumplings (rice rice dumplings wrapped with five-color silk); In the Song Dynasty, there were Jiao rice dumplings, Zhui rice dumplings, and wild rice dumplings (rice rice dumplings wrapped in wild rice leaves). Lu Xizhe of the Northern Song Dynasty recorded in "Miscellaneous Notes of the Years": "During the Dragon Boat Festival, the ancients used wild rice leaves to wrap sticky rice, which was called Jiao millet. It was left by each other and was commonly used to make rice dumplings. Some dates were added, or some sugar was added. In recent years, pine, Chestnut, walnut, ginger, cinnamon, musk and the like are often cooked with moxa ash and juice, and the color is like gold. "Li Tiaoyuan's "Nan Yue Notes" in the Qing Dynasty records that Guangdong rice dumplings are called "grey rice dumplings". ", those wrapped in bamboo leaves are called "tube rice dumplings", triangular ones are called "jiaozi rice dumplings", and meat rice dumplings, etc.

🍎Activities:

Auntie Chiu will take everyone to visit the farm, learn about crops, flowers and plants, and sow or plant corn with the children.
Auntie Chiu prepares the fillings for making rice dumplings together with friends of all ages. The method of making rice dumplings is roughly the same. They wrap the rice with leaves, tie it with ropes, and then put it into the pot to cook. On this basis, people make rice dumplings. Different fruits, meats and herbs are added inside to form different types of rice dumplings. Each person also has 3 rice dumplings / tea cakes to take back to share with the family (bring your own food box). The farm is very large and the grass is very beautiful. There are fruits and vegetables grown on the farm. You can pick and buy the vegetables according to the harvest. There are parking spaces on the farm. You must inform in advance to reserve a space and it costs 30 yuan.

The cost includes production fee, one farm master and assistant, material fee, and each person can take away 3 rice dumplings from his hometown.
