Detailed introduction
After the Pacific War, the Hiroshima nori fishing grounds that had been cultivated from the coast since the Edo period disappeared, but Mikuniya's love for nori remains.
Mikuniya's seaweed is spread all over the country, and it has been purchasing high-quality and high-grade raw materials, which can not only meet the needs of general customers, but also meet the requirements of food professionals.
The seaweed is carefully roasted according to its quality, using seaweed that matches various conditions such as color, aroma, and taste.
Soy sauce seaweed is cooked in a secret sauce made from carefully selected ingredients such as Setouchi shrimp.
Purchasing Seaweed
Laver is a natural product that is easily affected by climate and terroir. Quality varies by origin, time of harvest and year, making sourcing difficult but fun.
The seaweed is harvested from autumn to winter. During this time, we will travel to beaches all over the country. From various special seaweeds, we find the "beautiful color, elegant sweetness, and melt-in-the-mouth" seaweed that Mikuniya has been seeking. . We will identify and buy.
Nori processing
The factory is located in Ota-cho, Anki, Hiroshima Prefecture, where there are many forests, fresh air and a good environment.
Workers work in the clean room after being sterilized in the air-bathroom, and use the latest equipment such as metal detectors and foreign object detectors for safety management.
High-quality seaweed recognized by many chefs
In Japan, 8 billion pieces of nori are harvested each year for primary processing. Mikuniya will only bid about 3% of the highest quality nori in the nori auction, which many sushi chefs love.
In addition, it is processed as a high-quality home-grown seaweed in department stores and high-end food stores across Japan, and inquiries from overseas restaurants such as London and Paris have been increasing in recent years.
Roasted seaweed that fully utilizes the flavor of the seaweed from each production area
"Yaki nori" is roasted by craftsmen according to the quality of each piece of nori, which is full of aroma, and is immediately put into bags, so that the aroma of freshly baked seaweed can be preserved.
The Ariake Sea in Kyushu, Tokushima in Shikoku, Mikawa Bay in Aichi Prefecture, Chiba and other places of origin have completely different tastes.
The Secret of the Best Nori
Winter is the nori harvest season, and we will participate in nori auctions held at 20 locations across the country. Hundreds of samples of seaweed harvested this year are lined up in the auction, and we will review them one by one to find high-quality seaweed.
Among Japanese nori, the most famous is the seaweed from the Ariake Sea of Kyushu. More than 100 large and small rivers rich in nutrients flow into the Ariake Sea, the largest shallow bay in Kyushu. The mixture of seawater and freshwater is very suitable for the growth of nori. Nori harvested in the Ariake Sea is called "Ariake Nori", and its high-quality taste is widely known.
There are about 1,000 nori specialty stores in Japan, but only about 40 nori specialty stores have the right to bid for "Ariake Nori". Mikuniya is a company with bidding rights, specializing in advanced bidding, so you can buy the best seaweed from Ariake first.
