Rice Dumpling with Lye Making Technique

This activity now includes the techniques of making Glutinous Rice Dumplings and the Rice Dumpling with Lye Making Technique in the Hong Kong Intangible Cultural Heritage Database, which published the first "Hong Kong Intangible Cultural Heritage Representative List".

Glutinous rice dumplings basically fall into two categories, namely rice dumplings with lye and rice dumplings with salted pork, which are traditional festive food of the Dragon Boat Festival.

Rice dumplings with lye water are made from the ashes of fruit tree branches and glutinous rice. Wrapped in bamboo leaves, the rice dumplings are prepared in boiling water. They are a popular festive food of the Dragon Boat Festival in particular to Hakka people.

Dragon Boat Festival is on The fifth day of the fifth lunar month.

Event Details

Experienced instructors explain and teach traditional rice dumpling techniques. Each person makes four pieces of Hakka rice dumplings, which can be steamed at home, and share experience and taste Hakka rice dumplings. The teaching includes vegetarian bean rice dumplings, bacon rice dumplings, etc.

History
Rice dumplings are a festival food for the Dragon Boat Festival. They were called jiao millet (角黍) in ancient times. As early as in "Shuowen Jiezi" 《說文解字》, the word "糭" already exists. It has a long history.

The following is one of the processes of making Lye Rice dumplings:

Since Lye water cannot melt sticky rice, the first step in making Lye water glutinous rice dumplings is to pour glutinous rice into a bamboo basket, and then sort out the mixed sticky rice one by one. At the same time, start to make Lye water, first select woody trees to burn into ash, and then use a sieve to separate the ash and charcoal, leaving only the white ash for later use. Then pour the lime into the big bamboo basket that has been padded with bamboo leaves, and then use the weight of a person to trample the lime until it is flat. The next step is to prepare the plant juice for dyeing the rice dumplings. The method is to boil the leaves of "Lang Mang Leaf" (朗芒葉) and "Water Weng Tree" (水翁樹) in water until the yellow juice oozes out. After the juice cools down, it can be divided into several pieces. Pour it into the bamboo basket again. The juice can be injected every three to four hours, each serving is about the volume of a half-bottled water, after the first two days after pouring the juice, the white ash will slowly absorb the juice, and it will start to count on the third day Drops of gray water seeped out. After the gray water has been taste-tested, if it can stimulate the tongue, it is considered to be ready.

Then use a stone mill (石磨) to grind off the husks of the selected glutinous rice, put it in a clean basin, and then pour homemade gray water, the amount is about a little higher than the glutinous rice. The glutinous rice should be soaked in the lye water for at least 10 hours. During this period, the glutinous rice can be turned to ensure that all the glutinous rice can touch the lye water. This step must use lye water with sufficient concentration.

After soaking, the bamboo leaves used for wrapping rice dumplings can be washed. The skill of wrapping glutinous rice dumplings is that the amount of glutinous rice should not be too much. One glutinous rice dumpling needs about the palm of your hand. It should not be wrapped too tightly, because the glutinous rice will expand after being heated, and the taste will be affected if it is tied too tightly. After bandaging, it will be cooked and completed.

Activities
Since ancient times, the method of wrapping glutinous rice dumplings is roughly the same. They wrap the rice in leaves, tie it with a rope, and then put it in a pot to cook. On this basis, people add different fruits, meat and herbs to the rice dumpling. Different types of dumplings are formed.
