This process involves curdling and straining the cocktail through milk, which not only clarifies the mixture but also gives it a silky smooth texture. What is milk punch?

The cocktail is clarified with milk using a method that is over 200 years old. As early as 1711, the housewife Mary Rockett recorded a recipe that is now considered the first written mention of the Milk Punch genre. According to cocktail historian David Wondrich, “Mary Rockett's Citrus Milk Punch” was made by mixing brandy, lemon juice and zest, sugar and water. The mix was then poured with boiling milk - and the flocculating protein solids were strained off after a while to obtain a clarified drink.

The special thing about the technique is that the clarification filters out all cloudy and bitter substances and you get a crystal-clear drink. A nice side effect is that the cocktail has a much longer shelf life.
