Greek walnuts (shelled), or simply "Greek walnuts," originate from the premium walnut-growing regions of Greece. They are commonly found in organic and high-end nut markets, emphasizing their natural, additive-free, and traditional flavor. Greek walnut cultivation has a long history (tracing back to the mythical origins of Zeus and Persia in ancient Greek mythology). Modern growing regions such as Evia and the Atoro-Acananian Mountains benefit from the abundant Mediterranean sunshine, fertile soil, and traditional sun-drying methods (without chemical treatment). Harvested in September, they boast exceptional freshness and consistently superior quality, often considered a representative of premium European nuts.

As walnut kernels mature, the outer shell becomes brittle and the outer shell becomes hard. The shell surrounds the kernel or flesh, which is usually divided into two halves separated by a membranous partition. The seed kernel (usually available in the form of shelled walnuts) is enclosed in a brown seed coat that contains antioxidants. Antioxidants protect the oil-rich seeds from atmospheric oxygen, preventing them from becoming rancid.
Note: Storage
Walnuts, like other nuts, must be processed and stored correctly. Improper storage makes walnuts susceptible to infestation by insects and fungal molds; the latter produce aflatoxin, a potent carcinogen. Batches of walnuts containing mold infection should be discarded completely.
The ideal temperature for long-term storage of walnuts is -3 to 0 °C (27 to 32 °F) with lower humidity for industrial and home storage. However, in developing countries where walnuts are produced in large quantities, this freezing technology is not available; walnuts are best stored below 25 °C (77 °F) and with low humidity. Temperatures above 30 °C (86 °F) and humidity above 70% will result in rapid and severe spoilage losses. Above a humidity threshold of 75%, aflatoxin-releasing fungi form.
