Nutritional value: Chenpi, chen pi, or chimpi (simplified Chinese: 陈皮; traditional Chinese: 陳皮; pinyin: chénpí; lit.: 'preserved peel') is sun-dried tangerine peel used as a traditional seasoning in Chinese cooking and traditional medicine. It is aged by storing them dry. The taste is first slightly sweet, but the aftertaste is pungent and bitter. According to Chinese herbology, its attribute is warm. Chenpi has a common name, ‘ju pi’ or mandarin orange peel.Chenpi contains volatile oils which include the chemical compounds nobiletin, hesperidin, neohesperidin, tangeridin, citromitin, synephrine, carotene, cryptoxanthin, inositol, vitamin B1, and vitamin C.Traditional Chinese herbal medicine uses the alcohol extracts of several citrus peels, including those extracted from mandarin orange and bitter orange.

Cooking method:Tangerine peels can also be eaten. Cantonese usually use shredded tangerine peels and sprinkle them on the surface of osmanthus and sweet-scented osmanthus fish, and then steam the fish. Cantonese people think that when steaming these two kinds of fish, you should use shredded tangerine peels instead of ginger. Silk will greatly enhance the taste, which has become a common practice among Cantonese. In addition, the white porridge made with tangerine peel and rice porridge can reduce the taste of white porridge. From the perspective of traditional Chinese medicine, the white porridge with tangerine peel has the effect of smoothing the stomach and reducing phlegm and relieving cough.
